Hello. Last year my husband and I went to an Inn in Martha's Vineyard and had a wonderful mexican frittata like dish. I have since requested it from the owners and have searched the internet for something similar, all to no avail. I was wondering if anyone has a recipe for something like this:
It was like a mexican frittata - which contained salsa (cooked in the eggs) green onions, fresh coriander, cheese (cheddar) and eggs. It was light and fluffy, full of flavor, and served inside of a warmed tortilla. I may have forgotten a few ingredients but these are the essential ones. Thanks so much for all your help!!
