Potato Candy

1 potato boiled with skin on
1 box powdered sugar

Peel potato & smash it up real good with a fork. Add 1/4 teaspoon vanilla. Add powdered sugar. Beat with fork. Roll out on powdered sugar, spread with peanut butter. Roll up from one end, pinwheel fashion, slice into 1/4 inch slices.

Potato Candy 2

1/2 cup cooked mashed potatoes
2 tablespoons softened butter or margarine
1 pound confectioners sugar
2 squares cooking chocolate, softened and melted
1 teaspoon vanilla
dash of salt
coconut (optional)

Put mashed potatoes into a mixing bowl. Add soft butter and mix. Add confectioners sugar, mix well. Add vanilla to melted chocolate then add with salt to the mashed potato mix. Chill. Coconut may be added if desired.
