I fry corn bread in a cast iron skillet all the time in fact the skillet belonged to my mother in law. I use 2 cups self-rising corm meal, 1 egg, and about 1 cup buttermilk to make batter like cake batter, and fry like a pancake,make sure it is good and brown before turning, enjoy and hope your dad does!!!!!!!!
