Hi Christine:-)!! A neighbor of ours, in NY State, used to make these and give them out at Halloween. That dates me:-)! Those were the days when you didn't have to worry about getting dangerous objects in your Halloween treats. Everyone made homemade treats back then. These are pretty at Christmas (reminds me of snowflakes) and Valentine's Day (reminds me of lace). If you type "rosettes" into the search box, you will find many other additional recipes that have previously been posted here at recipelink.
Rosettes or Timbales "Fried light sweets-closely akin to timbales"
1 egg (I used 2 because I read that an extra egg would make them crispier. Honestly, I don't think that I noticed a difference) 1/2 c. all-purpose flour 1 Tbl. sugar 1/2 tsp. salt 1/2 c. milk 1 Tbl. vegetable oil (I used canola oil) Confectioner's sugar for dusting after frying
Heat fat or oil (3 to 4 inches) to 400 degrees F in small saucepan. (I used my electric frying pan at 375 degrees F). Beat egg slightly; add remaining ingredients and beat until smooth. Strain batter.
Heat Rosette iron in hot fat. Tap excess fat from iron. Dip iron into batter until 2/3 covered. Fry until golden brown. I turn them over with tongs halfway through frying. Remove from oil, inverting oil to drain fat. (Mine usually slip off the iron and that is why I turn them over. This assumes that you keep them on the iron the entire cooking time. It was not how my neighbor made them. She slipped them off the iron and turned them halfway through the frying time.) Gently push rosette from iron and invert on paper towels or a clean brown paper bag. Stir batter each time before dipping the heated iron. (I have never done this.) Sprinkle cookies with confectioner's sugar. Yield: 18 cookies I think that I got more than 18 from one recipe but it probably depends on the size of your irons as to how many cookies this recipe makes.
