Peggy, I always get compliments on these burgers....try them!
Chiqui Burgers
1/4 lb. fresh ground chuck per burger
Shape burgers and season each with: Lemon-pepper, granulated garlic, a splash of Lea & Perrins and a drop of liquid smoke.
In a large iron skillet, heat 5 slices of applewood smoked bacon. When the first side is well browned turn over the bacon slices and top with one large onion that has been sliced into thin rings. Scatter the rings over the bacon evenly. A soon as the onions come up to heat, top the onions with the seasoned burgers. Allow burgers to brown for about 5 minutes then transfer the pan to a 375* oven. Roast the hamburgers until they reach the desired doneness.
If the tops of the burgers are not browned enough, run under the broiler for about 3-5 minutes.
Brush bakery style hamburger buns or Kaiser rolls with a little melted butter, inside and out. Place in the same oven that you just took the burgers out of, but have turned off.
Allow buns to heat for about 5 minutes. Using a wide spatula, lift a burger with some of the caramelized bacon and onions onto a warm bun. Immediately top with finely shredded cheese of your choice; cheddar, swiss,etc.
Serve with all the usual condiments, Enjoy!
