Hi friends. Okay... picture this .... having successfully made baked potatoes for 40 plus years..... I am wondering if you folks can help me with this new happening.

I scrubbed 6 medium sized Russett potatoes (what I bought on sale). I poked each potato with a fork at least 3 times each. Put them in a preheated oven at 375 degrees.

One of them exploded and the rest came out hollow -- almost completely empty space inside. They were hardly suitable for potato skins.

Any ideas? I am guessing the exploding one just was not poked enough. I am more confused about the hollow potatoes.

Would love to hear your ideas.

Cheers,

Kelly~WA
