Here's my favorite that I adapted from a recipe I got off this site a while back:
Napa Valley Chicken Salad
2 cups cooked chicken
2 to 3 scallions, sliced thin
1/2 to 1 cup halved seedless grapes
1/2 cup diced celery (I omit)
1/2 cup Hidden Valley Original Ranch (more if you like)
Combine all ingredients and refrigerate for at least a few hours for flavors to blend.
