Easy Apricot Wine
12 lbs ripe Apricots 9 cups sugar 3 gallons water 1 pkg yeast
Place apricots in large crock or divide into 3 one gallon glass jars, no need to pit or peel apricots. Mash with a potatoe masher. Bring water to a boil and pour over apricots. Cover with plastic wrap and let set for 24 hours.
After 24 hours, drain water back into pot and bring to a simmer, add sugar and stir until well disolved. Let cool to just lukewarm, then add yeast.
Pour juice back over apricots, leaving alittle room to ferment. Cover with cheese cloth and let ferment for 10 days, stirring daily.
After 10 days strain off juice to remove pulp and pits, let juice rest in jars for another 4 days with air tight lids. You can now bottle the wine.
Strain wine thru a coffee fliter and funnel into bottles, if wine is not clear enough and some sediment remain, fllter again. Cork bottles and let age for 3 months in cool dark place.
