Hello again,

Don't know why I didn't think of this sooner—I did a search by entering all of the ingredients I remembered and found two recipes which were nearly identical to the one I used to make many years ago. One recipe was called Portuguese Potato Casserole and the other was called Pittsburgh Potatoes. This casserole is great to take on picnics or to serve at parties! Here's the recipe for Pittsburgh Potatoes, which sounded more the one I used to make:

PITTSBURGH POTATOES

10 medium potatoes, boiled in their skins then peeled and cubed
1 sm. jar pimiento, diced
1 lb. Velveeta cheese, diced
1 green pepper, diced
1 onion, diced
1 stick butter, diced
1 slice white bread, broken in cubes
1/4 c. milk
Salt & pepper

Pour into greased 9x13-inch casserole, cover with foil.

Bake at 350 degrees for 1 hour. Can be made up ahead and baked next day.

The only thing I used to do differently was to melt the stick of butter in a pan and slightly cook the onion and pepper (I use red) in it before adding to the rest of the ingredients.
