Broccoli Rice Casserole
1 cup chopped onion 1 cup chopped celery 3 Tbsp butter 1 can cream of chicken soup (or cream of mushroom) 1 soup can milk 1 small jar cheez-whiz 1 box frozen chopped broccoli or spears, thawed, drained 2 cups cooked rice (not Minute or instant) Salt and pepper (to taste)
Bring 1 cup water to a boil in a saucepan or deep skillet large enough to hold all ingredients.
Add the onions, celery, and butter and cook until the vegetables are tender.
Stir in soup and soup can of milk, then add cheez-whiz. Use a whisk if necessary to remove any lumps. Simmer for a minute or so, then stir in rice. Stir in broccoli and add salt and pepper to taste.
Spread mixture in a large casserole and bake 30 to 40 minutes in a moderate oven (350F). very good
