Sour Cream Fudge
2 cups sugar 1 cup sour cream 2 oz unsweetened chocolate, chopped 1/2 teaspoon salt 2 Tablespoons light corn syrup 2 Tablespoons butter 1 teaspoon vanilla 1/2 cup chopped walnuts(optional)
Combine sugar, sour cream, chocolate, salt and syrup in 2 quart saucepan. Cook over low heat, stirring until sugar dissolves. Heat to boiling, cover and cook 3 minutes.
Uncover and cook to soft ball stage (238 degrees F) stirring frequently. Remove from heat and add butter and vanilla.
Let cool to lukewarm(110 deg. F) without stirring, then beat vigorously until candy is creamy and has lost its gloss. Add walnuts if desired.
Pour in buttered pan. Cut in squares when cool.
*Note: We have always beat the fudge by hand, passing it around to cousins and uncles but I would guess you could use an electric mixer. Grandma and I think that once you try this fudge, you may never go back to regular fudge! |
