Sally, I think maybe you are a bit too nervous to use the slow cooker while you are at work.

So, here's a Q & E recipe my whole family loves

Beef (soft) Tacos:

1 lb ground beef (or chicken, or turkey)
1 package taco seasoning

Follow directions on package for preparing beef filling for tacos.

1 package tortillas (we use 7 inch whole wheat)

Toppings of your choice: we use diced tomato, shredded cheddar cheese, shredded lettuce, sour cream, and salsa (or taco sauce).

Put the tortillas on a plate, cover with a damp paper towel, seal with plastic wrap. A couple of minutes before the beef filling is finished cooking, zap the tortillas for 2 minutes on high.

Shred cheese, lettuce, and dice tomato and arrange all on a serving plate. Put salsa and sour cream in bowls to serve, with a spoon for helping oneself.

Set the table, because by the time you've prepped the ingredients, your filling on top of the stove is ready...

This probably takes 20 minutes (ok, maybe 21 or 22). Anyway, it's fast, and it's a build-your-own crowd pleaser.

Oh (in case you don't know). Take a tortilla, put a bit of filling on the centre, add the toppings, fold up the bottom toward the centre, and the sides toward the centre, too...and enjoy!
