STUFFED CABBAGE WITH TURKEY (oven)
Servings: 6 to 8

1 head green cabbage (cored), about 1 1/2 lbs.
1 lb. ground turkey
1 onion, finely chopped
1/3 cup rice, uncooked
1/3 cup milk
1 egg, beaten
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. nutmeg
2 cans (8 oz. each) tomato sauce
1/4 cup honey
1/4 cup lemon juice
1/2 tsp. Worcestershire sauce

Remove 12 large leaves of cabbage and boil in small amount of water in large saucepan for 10 minutes or until soft. Drain.

Preheat oven at 350 degrees.

In medium size bowl combine turkey, onion, rice, milk, egg, salt, pepper and nutmeg; mix well. Place approximately 1/3 cup mixture on each leaf. Roll leaf around mixture, tucking in sides. Place seam side down in ungreased 13x9-baking dish.

Combine remaining ingredients and cook over medium high heat to a boil. Boil 1 minute. Pour over cabbage rolls.

Cover and bake 1 to 1 1/2 hours or until turkey is cooked through and cabbage is tender.

CABBAGE ROLLS (stove top)

8 large cabbage leaves
1 lb. lean raw ground beef or ground turkey
Salt & pepper to taste
1 small onion, grated
1/2 cup cooked rice
2 cups tomato juice or V-8
1 medium onion, chopped
2 tbsp. vinegar or lemon juice
2 tbsp. sugar

Pour boiling water over cabbage leaves and soak long enough to soften and easy to handle.

Season meat with salt and pepper. Add grated onion and rice. Roll a portion of meat mixture in each leaf. Secure with toothpicks.

Place in large pot with the rest of the ingredients and simmer until cabbage is tender and well browned, about 1 to 1 1/2 hours.

CABBAGE ROLLS (crock pot)

12 large cabbage leaves
1 lb. ground turkey
1 cup cooked rice
1/4 cup minced onion
1/4 cup milk
1 egg, beaten
1 tsp. salt
1 (8 oz.) can tomato sauce
1 tbsp. brown sugar
1 tbsp. lemon juice
1 tsp. Worcestershire sauce
1/4 tsp. pepper

Immerse cabbage leaves in large pot of boiling water for about 3 minutes or until limp; drain.

Combine turkey, cooked rice, onion, milk, egg, salt, and pepper. Place about 1/4 cup meat mixture in center of each leaf; fold in sides and roll ends over meat. Place in crock pot.

Combine tomato sauce with brown sugar, lemon juice, and Worcestershire sauce. Pour over cabbage rolls.

Cover and cook on low 7-9 hours.

Hi Lorraine,
