SWEET POTATO SOUFFLE
FOR THE TOPPING: 1 cup brown sugar 1/3 cup flour 1 cup chopped pecans 1/3 stick butter FOR THE SOUFFLE: 3 cups mashed cooked sweet potatoes 1 cup sugar 1/2 tsp. salt 2 eggs, lightly beaten 1/3 stick butter, melted 1/2 cup milk 1 tsp. whiskey or rum
Preheat oven to 350 degrees F. Grease a 2 quart casserole or baking dish.
Mix together topping ingredients; set aside.
Mix potatoes with next 6 ingredients. Pour into prepare baking dish. Cover with topping.
Bake at 350 degrees for 35 minutes.
KAHLUA CANDIED SWEET POTATOES
8 medium sweet potatoes 1/4 lb. melted butter 2/3 cup brown sugar 1/2 cup Kahlua
Boil potatoes (must still be firm). In a large frying pan, bring butter, sugar and Kahlua to a low boil. Add peeled, lengthwise sliced potatoes to mixture. Keep turning until hot and well coated.

I know a holiday dinner isn't really time to experiment with recipes but I thought I'd post these for you in case yours doesn't turn up. Maybe substituting Irish Cream will give you something similar.
