Dear Sue ~ I am diabetic and frequently use Jello instant pudding mixes. I flavor mine by substituting some of the milk with the sugar-free syrup I use in my morning latte coffee. (You only need a little bit of the flavored syrup, however, maybe less than a tablespoon, according to your taste.) I currently have bottles of sugar-free kahula, sugar-free egg nog, sugar-free peanut butter and sugar-free Irish Cream in my closet. Yum. I buy these sugar-free syrups in a nearby Cash and Carry Store. I do not know if that is a nation-wide chain BUT...... each large bottle costs about $4.00 with tax. My local grocery store charges $7 to $8 per bottle for the same syrups. My local coffe vender charges $7 to $8 for tiny bottles and has very few sugar-free flavors. You might look around if you decide to buy some of these syrups. If you find the right store you will find many many flavors with which to play. Have fun.
