Recently in Mexico we caught a sailfish of aprox 90 lbs. We were discouraged from taking any for personal use with the message being that it was not that nice a fish and consequently was turned over to prisons and orphanages for their consumption.

I have the opinion that all fish is good but some is better then others and I was tempted to go home with a small sample filet or ask for the cheeks then cook in butter,onions & garlic.

Various recipe web sites show Marlin/Sailfish which I view as meaning comparably equal.

Finally my question. Can a sailfish filet be eaten with gusto or was I duped ?
