Dan, earlier today I sent off an email to one of the charter sites I looked at. I was particularly impressed by the friendlessness of their site and wanted to tell them so. I asked them about whether or not sailfish is edible. Here is their quick reply:

"Sailfish is indeed edible and quite good. Best if grilled. Most are released these days which is probably for the best. Look for a grilled swordfish recipe."
