Baked Candy Roll Makes about 80 slices
1 lb. dates, cut fine 1 lb. shelled whole Brazil nuts 1 lb. shredded coconut 1 (15 oz.) can sweetened condensed milk (Eagle)
Mix dates, nuts and coconut thoroughly. Add milk and knead well. Dip hands in cold water for ease of handling. Shape into 5 rolls approximately 2 inch in diameter and place on cookie sheet
Bake in oven at 275 degrees for about 45 minutes, turning rolls after first 20 minutes. Cool.
Wrap in aluminum foil and allow to mellow in refrigerator for at least 48 hours.
Cut in slices about 3/8 inch thick.
Bologna Candy
2 cups brown sugar 1/4 cup butter 1 cup Brazil nuts 1 cup milk 1 cup coconut 1 lb. dates
Boil sugar, butter and milk to soft ball stage.
Add dates and stir until mixture boils away from sides of pan.
Remove from heat; add Brazil nuts and coconut mix. Roll in dampened towel to desired diameter, approximately 1 1/2 inches. Cool until hardened.
Slice to desired thickness.
