Hi Boston. Well, your recipe certainly looks like it should have worked. Did you sauté the salt pork and onions? Humm. I too would consider adding a can of cream corn. Here are a few more ideas I have about add ons (not all at once, but options). Please let us know how this works out.

1/2 pound bacon (cooked and crumbled)
Sautéed chopped red pepper and celery
Cumin, paprika, chopped chilies and cilantro
Diced chicken or diced turkey
Granulated chicken bouillon
8 to 10 oz. processed cheese, cubed
2 cups shredded Monterey jack cheese
1 package Lipton onion soup mix
