This is a recipe which I've used.
ARTHUR TREACHER'S CLONED FISH BATTER
3 lbs. fish filets (haddock or white fish) salt and pepper BATTER: 2 cups all-purpose flour 3 cups regular pancake mix 1 tablespoon onion powder 1 tablespoon seasoned salt 3 cups club soda FOR FRYING: vegetable oil flour
Dress the fillets with some salt and pepper to taste.
TO MAKE THE BATTER: Place the 2 cups flour, pancake mix in a good sized bowl and mix well.
Add the onion powder and easy on the seasoned salt if you've already dressed the fillets. Mix well.
Add the club soda and mix with a wire whisk.
TO FRY THE FISH: Have at least 2-inches of a vegetable oil (preferably one with no trans fat) heated to approximately 400 degrees.
Dip your fillets in flour, shaking off excess.
Dip then in the club soda batter, letting excess drip back into bowl.
Place slowly in the hot oil using a fork at the thick tip of the fillet. Let cook until light brown on one side, then turn and complete frying. Drain on paper toweling.
