HI Emma, We LOVE sweet potatoes and eat them quite often. Here are two ways we like to fix them.
SWEET POTATO CASSEROLE
2 to 3 sweet potatoes, peeled, and sliced into thin slices water 2 large Granny Smith apples, peeled, cored and sliced into thin slices 1/4 to 1/2 cup raisins optional 1 stick (1/2 cup) butter, melted 1/2 cup brown sugar 1 tsp cinnamon 1/2 tsp nutmeg
In a pot of water bring to a boil, sweet potatoes. Boil until just barely tender, about 2-3 minutes. Drain and cool.
In a buttered casserole dish layer sweet potatoes, and apples, alternating layers adding raisins to each layer if desired.
Mix together melted butter, sugar, cinnamon, and nutmeg. Pour over potatoes and apples.
Bake covered at 350 for 25 minutes or until apples and potatoes are tender.
SWEET POTATO CASSEROLE WITH MARSHMALLOWS
3 sweet potatoes 1/4 cup milk 6 tbsp butter or margarine 3 tbsp brown sugar 1/4 tsp nutmeg 1/4 tsp cinnamon 1/4 cup chopped pecans 1 cup mini marshmallows
Wash sweet potatoes and pierce skins with a fork several times all around the potatoes. Microwave 5 minutes.
Turn over and rotate positions and microwave 5 minutes more. Microwave additional time if necessary until they are tender.
Cool until cool enough to handle, then scrape out pulp.
In a medium bowl, combine potatoes with milk, butter, and brown sugar mashing well until all is combined. Add nutmeg, cinnamon, and nuts; mix well. Pour into a buttered casserole dish.
Bake at 350 degrees for 30 minutes.
Add marshmallows to the top and bake until they are puffy and browned at 450 degrees.
