Found a recipe on the web for Oatmeal Pancakes and tweaked it to my needs. It's very, very yummy! You can make these in a regular skillet on the stove, but I do much better using an electric skillet. This recipe make about 13 medium pancakes, I ate three and froze the rest. I will post how they taste after freezing when I try them.-Micha Yummy Vanilla Oatmeal Pancakes Egg substitute equal to 3 eggs 1/2 cup sugar 1 teaspoon salt 1 teaspoon baking soda 2 cups low fat buttermilk 1/2 cup skim milk 1 teaspoon vanilla paste* (you can use extract if you want, I just like the extra flavor boost of the vanilla paste) 1-1 1/2 cups unbleached flour 1 cup old fashioned oats In a large bowl, whisk together the egg substitute, sugar, salt, baking soda, buttermilk, skim milk and vanilla paste. Whisk in oatmeal and 1 cup of the flour. Add remaining flour if batter seems to need it. Heat an electric skillet to about 380 degrees F. and spray with non-stick cooking spray. Drop 1/4 cup of batter onto hot skillet, then shake pan gently to spread pancake out a bit. Continue to make pancakes, shaking skillet gently after each addtion. Do not crowd skillet. When most of the bubbles that appear on top of the pancakes burst, carefully flip them over and cook second side until done. Very, very yummy! * Vanilla Bean Paste (click here)
