MULTIGRAIN PANCAKES
2/3 cup flour 1/3 cup wheat flour 2 tablespoons fine ground cornmeal 2 tablespoons wheat germ 1 teaspoon baking powder 1/2 teaspoon baking soda 3 tablespoons brown sugar 1 teaspoon cinnamon 1/4 teaspoon salt 1 1/4 cups buttermilk 2 egg whites 1 tablespoon butter melted 1 teaspoon vanilla
Mix batter very lightly, just until ingredients combined, or will be tough.
In large bowl, combine flours, cornmeal, wheat germ, baking powder and soda, brown sugar, cinnamon and salt. Make well in center.
In another large bowl, whisk buttermilk, egg, butter and vanilla. Pour buttermilk mix into well in flour and mix.
Coat skillet with nonstick spray; place over medium high until hot.
Spoon batter in 1/3 cup portions to make 12 pancakes.
