RICE PANCAKES
2 eggs, separated 1 cup milk 2 tbsp. butter, melted 1/2 cup flour (3/4 of it may be whole wheat flour) 1 1/2 tsp. baking powder 1 tsp. sugar (optional) 1 tsp. salt 1 cup leftover cooked rice
Beat egg yolks, then add milk and butter and beat well.
Sift dry ingredients together and add to egg mixture. Add rice.
Beat egg whites stiff and fold into mixture.
Drop by spoonfuls onto hot greased griddle. Brown and turn quickly when full of air.
RICE PANCAKES (using 1/2 cup rice)
3/4 cup flour 1 1/2 tsp. baking powder 1/2 tsp. sugar (optional) 1/4 tsp. salt 1 egg, separated 1 cup milk 2 tbsp. melted butter 1/2 tsp. vanilla 1/2 cup cooked rice
Sift together flour, baking powder, sugar and salt; set aside.
Beat egg yolk until light. Add milk, butter and vanilla. Mix well.
Stir in dry ingredients and beat until smooth with a rotary beater.
Blend in rice.
Beat egg white until stiff but not dry. Fold into rice mixture.
Bake on hot griddle, using about 1 tablespoon batter for each cake.
