That's a good bit of apple butter, but in some homes around here, it would not last long.
Apple butter goes well with cornbread, polenta, biscuits, oatmeal, even cottage cheese.
I agree with june. There are applesauce cakes that you could substitute the applebutter for the applesauce. You may want to cut the other spices that go into the cake a little as the applebutter usually has spices in it. Here is a recipe for Apple Butter Cake but it calls for only one cup.
APPLE BUTTER CAKE
1 1/2 cups sugar 1(8 oz) pkg cream cheese, softened 1/2 cup margarine, softened 2 eggs 2 cups all-purpose flour 1 cup Quaker cornmeal 1 tsp. cinnamon 1 tsp. salt 1 cup spiced apple butter 1 tsp. vanilla 1 cup chopped pecans FOR THE GLAZE: 1 cup powdered sugar 4/5 tsp. milk 1 1/2 tsp. corn syrup 1/4 tsp. vanilla
Heat oven to 350. Grease tube pan or Bundt pan.
Beat sugar, cream cheese and margarine until light. Add eggs one at a time and mix well. Add flour, cornmeal, cinnamon and salt with apple butter and vanilla. Mix well until blended. Stir in pecans.
Bake for 60 to 70 minutes. Cool.
Combine the glaze ingredients, pour over cooled cake.
I've never tried this, but this comes from a good cook.
