NO-BAKE COOKIES

2 cups sugar
1/3 cup unsweetened cocoa powder
1 stick (1/2 cup) margarine, melted*
1/2 cup milk
3 cups oats
1 heaping cup peanut butter
1 tsp. vanilla

In 3 quart saucepan blend sugar and cocoa to uniform color
add margarine and milk, wisk until thoroughly mixed. Bring mixture to rapid boil...continue for one minute (precisely).

Reduce heat to low, stir in vanilla, then blend in peanut *butter until an even color (no swirls).

Remove from heat and add oatmeal stirring rapidly until mixed.

Drop by spoon onto lightly sprayed aluminum foil. Allow to cool and enjoy!

*For high humidity or for firmer cookies try reducing the amount of margarine used. I've made them with as little as half a stick (half of what recipe calls for) and they still are quite flavorful yet significantly drier.
