Hi Kim,

I have made Paula's Lemon Blossoms, and yes, the batter will be very stiff and gooey. You need two spoons to put the batter in the muffin tin. Be sure to spray the muffin tin VERY WELL so that they do pop out.

Make sure you use large eggs also. The end results is that they taste like little glazed lemon donuts. They are irristible...you can't eat just one.

Then there's the glazing process...make sure you use a fork to dunk the top into the glaze and quickly turn over so that the glaze runs down the sides. Wait a few minutes after they dry and repeat the process.

Please give them another try because they truly are lemony delightful!!
