CRUSTLESS SPINACH QUICHE
3 beaten eggs 1 cup milk 1 cup flour 1 tsp. baking powder 1 tsp. salt 1 (10 oz) box frozen chopped spinach, thawed and well drained 1 lb. shredded Cheddar cheese Parmesan cheese (optional)
Preheat oven to 350 degrees F. Grease a 13x9-inch baking pan well.*
Combine eggs and milk. Add flour, baking powder and salt gradually to egg and milk mixture. Add cheese and thawed spinach; mix well. Pour into prepared pan. Sprinkle the top with Parmesan cheese.
Bake 30-35 minutes at 350 degrees. Cool 1/2 hour.
Cut into squares. Serves as appetizer.
*May also be baked in two glass pie plates for same time for entree or brunch.
