My Mom made Fried Pies too but she would use canned biscuits, the regular kind, and rolled them out on a floured board, cut and filled them, then fried them in a skillet, cast iron of course. For the filling, she just covered dried apples with water and put on the stove to simmer, cooking until soft and adding water if needed. Then she mashed the cooked fruit with a little sugar. We made them with dried peaches and apricots too.
