My husband and I caught a sail fish on our honeymoon and we were told to keep it. They cut it up for us right at the marina and sent us packing with the steaks. We gave the meat to our resort. They cooked us some for dinner that night and froze the rest to take home with us to the states. We ate a lot of good food on our honeymoon, but our own sail fish was our favorite meal! They made it two different ways for us. They smoked some and had it made into a dip with peppers, onions, butter and garlic. We ate it with tortilla chips and it was excellent! They also grilled us some with a garlic, lime flavor. This was also good. Since we've been home we've tried to make it a few different ways - most of which were barely tolerable. Last night we made our last attempt before giving up and throwing the remainder of our catch away. We decided to smoke it - which we did. The brine we used was a little salty, so we shredded the fillets and sauteed the fish in butter with lemon, peppers, onion and garlic. We served it over rice and finally found a way to make the fish at home a way we liked it!
