MATZO MEAL PANCAKES
3 eggs 1 cup milk or water 1 cup Aviv matzo meal 1/2 teaspoon sugar 1/2 teaspoon salt shortening for deep-frying
Beat eggs, add liquid and stir in matzo meal, sugar, and salt to make a smooth batter that is thick enough to drop from a large spoon.
Drop by the spoonful into melted shortening deep enough to fry the pancakes. Brown on both sides, drain well.
Serve with applesauce, cheese, or sprinkle with sugar and cinnamon.
