LUSCIOUS LEMON CREAM FRUIT DIP
(using lemon juice concentrate)

2 eggs
1 cup sugar, divided use
1/3 cup ReaLemon lemon juice from concentrate
1 tbsp. cornstarch
1/2 cup water
1 tsp. vanilla extract
1 cup heavy (whipping) cream, whipped*

In bowl, beat together eggs, 1/2 cup sugar and ReaLemon.

In saucepan, combine remaining 1/2 cup sugar and cornstarch; stir in water. Cook and stir until thickened; remove from heat.

Gradually beat in egg mixture. Over low heat, cook and stir until slightly thickened. Add vanilla; refrigerate until cooled.

Fold whipped cream into cooled mixture. Serve with fresh fruit. Refrigerate leftovers.

In small bowl, beat eggs, 1/2 cup sugar and lemon until foamy. Set aside.

In medium saucepan, combine 1/2 cup sugar and cornstarch. Gradually add water, mix well over medium heat. Cook and stir until thick and clear. Remove from heat.

Beat in egg mixture. Over low heat, cook and stir until thickened. Remove from heat. Cool.

Whip whipping cream, add vanilla and fold into cooled mixture. Serve with fresh fruit. Refrigerate.

*NOTE: 2 cups thawed Cool Whip may be substituted for the whipped cream in either of the above recipes.
