This is a recipe for Limoncello that we make every year. We have to buyt our lemons, as they do not grow at all here in the Northeast..so yours with homegrown lemons should be AMAZING!

We first get Everclear grain alcohol, or you could use Vodka..doesn't have to be the most expensive vodka, just one that you would be happy with in a mixer. Then you peel lemons,but ONLY THE YELLOW SKIN..no white pith or as little as you can get because that makes the liquor become bitter.We take a 32 oz canning jar and we put the peels of 9 lemons in each and then fill them up with the Everclear or Vodka, leaving a small space to allow room for shaking. Then you let them sit for about 1 week. You will see the peels becoming white and the alcohol turning bright yellow as the lomon rind gives up its wonderfuil essential oils. Shake every day to make sure that everything is well mixed.

After 1 week strain peels out of alcohol. You then get out a pan and make a simple syrup, which is equal parts sugar and water boiled until sugar is completely dissolved. Cool the syrup and mix with Alcohol until you reach desired 'proof' or strength. Sstore bought Limoncello is about 60 proof which is easy to get with the grain alcohol or you can make it a little stronger if you like! The more sugar water you add the sweeter it will be. YUM!

Then once bottled store in the freezer. It will turn a golden syrupy delicious consistency! Sip it in cordial glasses straight from the freezer and enjoy on a hot day!

You can also use it in recipes that call for lemon flavoring and its also great over vanilla ice cream or sorbet! ENJOY!
