I found the recipe on a Cuban food website and did not notice the omission of the water in the preparation steps. Since I'm not familiar with the recipe, I have no clue about how the water would be used.
My new suggestion to Sherry would be to try Emeril's recipe in Jackie's post.

Just curious... Are pork chicharrones a traditional Puerto Rican food, Gladys?
