This is the recipe I used on several occasions ~

CREAM CHEESE MINTS

1 lb. powdered sugar
1 (3 ounce) package cream cheese, softened
Candy flavoring
Paste food color
Granulated sugar for shaping

Mash the cream cheese. Add the powdered sugar gradually until the candy mixture becomes like a stiff pie dough. This will take approximately 3 3/4 cups of sugar. If you're using more than one color and flavoring, separate the candy mixture into individual bowls now.

Add the desired flavoring, approximately 1/2 teaspoon, and the paste color a little at a time until you reach the desired depth of flavor and colore that you want.

Pinch off small balls of dough, as much as will approximately fill the rubber candy mold. Roll the ball in granulated sugar. Press the ball firmly into the mold and scrape off the excess level with the mold's shape. Unmold at once. If the candy sticks in the mold, add more powdered sugar to the mixture. Yield depends on the size of each shape.

Here's another recipe I haven't tried ~

BUTTER CREME MINT

3 tbsp. soft butter
3 tbsp. sweetened condensed milk
2 tsp. candy flavoring
1 lb. powdered sugar
Paste food color

Blend butter, condensed milk, and flavoring. Gradually add powdered sugar until mixture becomes stiff. Continue as in the above recipe, adding color and shaping as directed.
