Hi Therese',

Carob may be used as a substitute for unsweetened cocoa powder or unsweetened chocolate in recipes.

- Substitute unsweetened cocoa powder with an equal amount of carob powder (some suggest adding a little more carob than the cocoa).

- Substitue each square unsweetened chocolate (1 ounce/30 g) with 3 tablespoons of carob powder (some suggest using 3 tablespoons carob powder plus 2 tablespoons water for each square of chocolate.

- Carob chips may be substituted equally for chocolate chips in recipes (carob chips are sold sweetened or unsweetened).

Oven temperature may need to be lowered a little when baking with carob.
