Hi Therese',

Carob may be used as a substitute for unsweetened cocoa powder or unsweetened chocolate in recipes.

- Substitute unsweetened cocoa powder with an equal amount of carob powder (some suggest adding a little more carob than the cocoa).

- Substitue each square unsweetened chocolate (1 ounce/30 g) with 3 tablespoons of carob powder (some suggest using 3 tablespoons carob powder plus 2 tablespoons water for each square of chocolate.

- Carob chips may be substituted equally for chocolate chips in recipes (note that some carob chips are sold unsweetened so you'll need to experiment with sweeteened and unsweetened chips to get the taste you want.

Oven temperature may need to be lowered a little when baking with carob.

I hope that's a help,
