BLUE DEVILS6 hard-cooked eggs, peeled, cut in half, and yolks mashed in a bowl
2 tablespoons plus 2 teaspoons mayonnaise
1 teaspoon Dijon-style mustard
2 tablespoons crumbled blue cheese
Salt and black pepper to taste
About 3 tablespoons crumbled fried bacon or real bacon bits
Combine thoroughly mashed yolks with mayonnaise and mustard.
Add blue cheese and mash well into mixture with a spoon. Taste and then season with salt and pepper.
Fill whites evenly with mixture and garnish each egg half with bacon bits.
