Quite a few years ago, while in Amish country in Pennsylvania, one of the buffets served a corn pudding that was wonderful, it was made using the dried corn instead of fresh corn. It had a whole different taste and texture - more chewy and nutty tasting. Does anyone know what I'm referring to?

During my last trip there, I was able to buy a box of the dehydrated baked corn (sold in a box like rice) and it had the recipe for the corn pudding on the box and it did turn out just like theirs tasted.

Would love to find out if that corn can be purchased and if anyone has that recipe.
