ANGELS ON HORSEBACK (PBS)
6 oysters, shelled or canned 2 teaspoons lemon juice 2 tablespoons parsley, finely chopped 1 teaspoon Worcestershire Sauce Freshly ground black pepper to taste 2 slices white bread 1 tablespoon olive oil Pinch each salt & pepper 2 slices bacon 1 tablespoon butter, softened 4 tablespoons parsley, finely chopped
Preheat the oven to 350 degrees F.
Mix oysters, juice, sauce, parsley and pepper. Cover and rest for 30 minutes.
Using a round cutter cut the bread into 6 rounds. Brush one side of the bread with the olive oil. Sprinkle with salt & pepper.
Place on a baking sheet and bake in the oven until toasted. Remove from the oven and let cool completely.
Stretch out the bacon to twice their length and cut into 3 pieces. Wrap oysters in bacon and skewer with toothpick.
Bake at 350 degrees F until crispy.
Thinly coat the outer edge of the toast rounds with the butter. Press the parsley onto the butter to form a ring around the toast. Top with the warm oyster and serve immediately.
