FYI: I've teens who left a HUGE jug of salsa opened/barely touched in the fridge & left town for 1 month (or more)on working holiday or at College. Other then the usual (Tacos, Spanish Rice & similar recipes: how can I use it up-as I want my fridge space back fast!)

Most web searches under salsa recipes come up with "making fresh salsas" . .. not what I want. I don't want to throw it out (I'm thrifty) but would like many more ideas!

PS: With just 2 of us this will last forever!
