Quesadilla Snacks
6 slices bacon, cooked and crumbled, divided use 1 cup refried beans 1/2 cup prepared salsa plus more for optional garnish 5 (7- or 8-inch) soft flour tortillas 3/4 cup (3 ounces) shredded mild Cheddar cheese Sour cream, for garnish Sliced green onions, for garnish
Reserve 2 tablespoons bacon. In a small bowl, combine remaining bacon, refried beans and salsa. Spread about 1/3 cup of mixture onto half of each tortilla. Sprinkle each with about 2 tablespoons cheese. Fold tortillas in half over filling.
In an ungreased skillet over medium heat, heat 2 filled tortillas at a time for 2 minutes on each side or until cheese melts. Cut each tortilla into 4 triangles.
Top each triangle with salsa, sour cream, green onions and reserved bacon. Serve immediately.
