I made a double batch of these cookies for a church festival bake-sale using apricot and strawberry jam. They went over very well and were gone very quickly. They were very pretty and tasty. I also experiemented in using chocolate chips (I didn't have the large kisses handy but they would have looked so cute). The small chocolate chips melted well when the cookies were warm and my nephew and the kids working ate up the few chocolate ones before I could sell them. LOL

The recipe did not make 32 cookies so I did have to double the batch. The recipe was very good and the dough was very crispy yet tender yummy. Next time I will vary the jam/jelly flavours some more.

Skipped the step of rolling in the egg whites and rolling in nuts as there are people with nut allergies in our family and parish. Cookies were still very pretty without the nuts.

Excellent recipe and one I will be using for Christmas this year. Recipe is easy to make and kids can certainly make this recipe.
