I've made a simple salad like this with equal parts of the various ingredients, served with an Italian salad dressing. It's always gobbled up quickly!
MEDITERRANEAN SALAD
1 zucchini, diced 2 roma tomatoes, diced 1/2 of a 1 lb. summer sausage, diced 1 cucumber, peeled and diced 1 green pepper, diced 1 (16-oz.) can white beans (like cannelini) 8 oz. of diced mozzerella, or colby or jack cheese 1 cup Italian dressing
Mix all the ingredients and pour over salad dressing. Refrigerate for about an hour and toss again before serving.
It's a very pliable/forgiving recipe.....and I think I'm going to make it for lunch today! LOL! |
