We had a chain of these popular sandwich restauants at one time in So. Illinois. Now, as far as I know, only one stil exists. It is located in Christopher Illinois. First the ground hamburgewr meat is lightly boiled (steamed) in just a little water. Then dained. Next it is placed on an open grill (griddle) and scramble fried to brown (not long). Mustard is brushed on the bun and meat is scooped up an placed on bun. Maid Rites with means with "onions" without means "without onions". The entire sandwich is then placed bottom side down on the grill for a minute or two to firm up bottom bun. Then remove and they wrap in deli paper to serve. Adults never use ketchup on their Maid Rites but kids often add it before eating as it makes the meat stick together. I was raised in a nearby town that also had a Maid Rite sandwich shop. They stay busy even with their very limited menu and also feature homade pies. We love these! |
