YULETIDE FROZEN FRUIT SALAD
"Make ahead of time and have on hand for the holidays!"
1/2 cup pitted Royal Anne cherries 1/2 cup maraschino cherries halved 1/2 cup pears (large dice) 1/2 cup peaches (large dice) 1/2 cup chunk pineapple 2 tablespoons confectioner's sugar 1/2 cup pineapple juice 1/2 cup mayonnaise 1/4 teaspoon grated lemon rind 8 ounces whipping cream, whipped 1/2 cup miniature marshmallows FOR SERVING: 8 lettuce leaves 2 to 3 tablespoons mayonnaise 8 maraschino cherries
Drain all fruits and dice; set aside to drain well.
Dissolve sugar in pineapple juice. Combine pineapple juice, mayonnaise and lemon rind. Gently stir mayonnaise mixture, well-drained fruits and marshmallows into whipped cream.
Lightly grease an 8x8 glass dish or decorative mold with mayonnaise. Pour fruit salad into dish; top with plastic wrap and freeze overnight
TO SERVE: Allow to sit at room temperature for 5 minutes before slicing. Cut salad in squares; place on lettuce leaf. Top with a dollop of mayonnaise and a cherry.
NOTE: If freezing longer than overnight, seal tightly in foil or plastic wrap.
