Hi luckily I remembered seeing some recipes in my preserve books for apple butter this one is called ...

CIDER APPLE BUTTER

3kg/ 6lb apples
1 litre / 2 pints of water
granulated or soft brown sugar
1 tsp ground cloves
1 tsp ground cinnamon
1 tsp ground nutmeg

(I thought cinnamon and cloves were the same? )

Was apples and cut them up without peeling.Put into large pan with the water and cider and simmer until soft. Sieve and weigh the pulp.he pulp.Simmer the pulp until thick and cramy.

Add 350g /12oz sugar to each 500g / lb of weighed pulp. Stir the sugar and spices into the apples and cook gently stirring often, until no surplus liquid remains.

Store in refrigerator.

A mixture of apples may be used, and the same recipe may be used for crab apples.

I also have recipes for Plum and Apple butter, Cherry Butter, Rhubarb Butter. And have some recipes for Gooseberry Cheese, Sloe Cheese, Blackberry Cheese which are which are just pure simpicity to prepare.
