Eureka! I found it! This was my favorite banana bread recipe, especially after my husband had a heart attack & we stopped using shortening & butter. I lost my cookbooks 16 mos ago in the Witch Creek fire in Poway, CA & have been unable to find a healthy banana bread recipe that tasted good, was moist, and healthy until today. I use 1/2 whole wheat flour, add wheat germ & oat bran at times, but in small amounts to not affect the bread's integrity! Hurrah! |
