Here is my potato salad recipe - I'm going to guess as quantities since its one of those family recipes where you add a little of this or that until it looks right!
2 lbs potatoes (preferably red/new potatoes) 2-3 stalks celery, chopped 1 small onion, chopped 2 hard boiled eggs 1 cup real mayonnaise (sorry - light mayo doesn't work as well) 1 small jar diced pimento Salt Pepper Paprika
Boil potatoes with skins on. Let cool completely and peel. Add onion and celery to a large bowl. Dice potatoes and add to bowl. Add salt and pepper to your taste. Add chopped egg and pimento. Add mayonnaise. Stir completely. Place in serving bowl. Sprinkle with paprika. Best if it sits in refrig. for several hours or overnight so the flavors can mingle.
