Elly, if your family likes anything with bananas, I think they'll love this:
Banana Crunch
1 cup sugar 1 egg 1 cup broken pecan pieces 3 bananas 1 pkg instant vanilla pudding 1 cup sour cream 1 cup milk 1 large container of Cool Whip
Beat together sugar and egg. Add pecans and bake at 200 degrees for 20 minutes in a shallow oblong casserole dish. Remove from oven and let cool (it will crumble).
Slice bananas and place in bottom of casserole dish. Mix pudding, sour cream and milk and pour half of mixture over bananas. Place half of crunch mixture on top and then pour remaining pudding mixture over all. Cover with Cool Whip and sprinkle remaining crunch mixture on top.
Elly, the above is the original recipe. When I made it, I actually had to bake the crunch mixture for about 35 minutes until it felt "dry" enough. I used a 1-ounce (4 serving) size package of fat free, sugar free, instant pudding, non-fat sour cream, and skim milk. I used "lite" Cool Whip, and didn't use much of it. I did use about 4 medium bananas. I used a 1-1/2-quart round, deep, casserole and layered the ingredients as follows: bananas-pudding-crunch, bananas-pudding-crunch, bananas-Cool Whip-crunch. Then I covered the dish and refrigerated it for a few hours. Yum-yum-yum!
I would love to have a few of those pies you listed. Would you post the Peach Amaretto Cheese Pie, the Frozen Chocolate Mousse Pie (my husband's favorite dessert is chocolate mousse), and the (what else!) Banana Cream Cheese Pie, whenever you have some time - no rush.
